Since being on quarantine, my personal chef, Parish, has had another kitchen helper to invade his space. I’ve cooked some pretty amazing meals from whatever we’ve had available. That’s my gift–resourceful and don’t over think it. He is more the “follow a recipe chef”. Who does that? So for this recipe, you’ll have to go with it and just try it your way along with my directions. Let me know if you go for it! Remember you can adapt to what you have in your fridge and to your personal taste.
Ingredients
2 cups fresh spinach, why did we buy this huge thing of spinach, and how will we use it?
One left over baked potato, from your steak night
Two hard boiled eggs. because you thought that was a good idea to hard boil them a few days ago
Shredded swiss cheese, because the grocery store ran out of chedder
Smoked paprika ( a staple in our house)
Salt/Pepper to taste
One tablespoon of butter
Directions:
In a 9 by 9 or 8 by 8 cooking dish, put one tablespoon of butter in the dish, and place in the oven at 350 degrees to heat pan and melt butter (about 3 -5 minutes) Keep an eye on it.
Steam your spinach. I do this by putting a small amount of water and/or olive oil in a frying pan, put the spinach in the pan, stir it around on medium until soft but not mushy–no mush!
Cut your eggs and potato up thick, chip style, circles (a 1/3 of inch, says my husband as I’m writing this). Really?
Now to layer.
Make sure butter is all around the pan.
Add Spinach, potatoes, then eggs. I did it like a pizza so one could cut a square of spinach, potato, egg
As you do your layers add pepper and salt to taste. I love salt.
Add the smoked paprika to taste (this gives it a “smoky” taste, which we love.)
On the top, sprinkle enough cheese that makes you say, “YES!”
Put in 350 degree oven for about 15 minutes. Remember, I didn’t time it. You just want the items to be warm, melted, and heated up. Everything is cooked.
Makes 4 servings for those who eat light or regular servings. 2 Servings for hunger folks–going back for seconds!
