Mediterranean Chicken

I received a wonderful email from a friend (Trish Boland) at work stating she was making extra Mediterranean Chicken, and she would bring some in for us to celebrate my birthday!  What a treat!  I just had to share the magic – all my favorites: feta, kalamata olives, artichoke hearts….

Mediterranean Chicken

Lightly pound 4 chicken breasts to an even thickness (or buy thin breasts)

Place each breast in center of a 14 inch piece of foil

In medium large bowl, combine 14 oz can of diced tomatoes (drain well), 14 oz can of quartered artichoke hearts, 12-14 large kalamata olives (halved), and 2 oz of feta cheese

Top each chicken breast with mixture

Drizzle each piece with olive oil and sprinkle with oregano

Seal each foil package and place on edged baking sheet

Bake for 22-25 minutes at 375 degrees

She recommends buying feta in bulk from Costco or Sam’s Club.  Also the cool thing about this dish is that they are individually wrapped, so easy clean up!
